carnival peppers

We just started eating, dicing, and freezing delicious bell (sweet) peppers from our garden. We planted a Carnival Mix seed assortment and you can see the beautiful colors we've gotten. I've found that freezing two cups of diced peppers at a time in pint bags is perfect for using later in cooking. Take them out of the freezer, break the frozen mass in half, break up the pieces (saving the other half for your next recipe) and add them, frozen, to the pan or pot. We cook a lot of recipes that call for a cup of diced bell peppers and they are SO expensive, so this is one garden project that is easily worth the extra time and effort! 11 cups and counting...
